An Elf’s Favorite: Ooey Gooey Chocolate Cookies

These little bites are the perfect escape for your taste buds this holiday season! Mrs. Claus makes these delectable treats for us elves when we’ve had an exceptionally busy day. They have a light crisp exterior and a gooey melty interior, and not to say they are most pleasing to the eye on any holiday table!

Cookies

To make these charming treats all you need is:

3 tablespoons butter, melted

½ cup sugar

1 large egg

½ teaspoon vanilla

3 tablespoons unsweetened cocoa powder

½ cup flour

½ teaspoon baking powder

⅛ teaspoon salt

¼ cup semisweet chocolate chips

Powdered Sugar

– In an electric mixing bowl combine the butter, sugar and vanilla until smooth.

– Crack the egg in and mix until smooth

– In a separate bowl whisk together the cocoa, flour, baking powder, and salt.

– Add the flour to the wet mixture sifting little by little, mixing between each add.

– Then fold in the chocolate chips.

– Now cover the bowl and allow to chill in the fridge for at least an hour, until the dough is firm enough to handle.

– While the dough is chilling prepare your baking pans by lining them with foil. This helps to prevent powdered sugar from sticking to your bakeware.

– Preheat oven to 350 degrees. Prepare ½ cup of powdered sugar into a small bowl (you may need more but this is a good start).

– After the dough is chilled, use a spoon to form 1 inch balls and roll them in the powdered sugar until coated all around.

– Bake for 12 minutes.

Celebrate Ten Years of Tradition at Snowflake Lane

Snow, singing, and drums beating! What could be a more festive way to greet Santa Claus? Every year the Bellevue Collection puts on a spectacular parade to help kick off the holiday season and this year is extra special! Snowflake Lane celebrates its ten year anniversary.

Sights to see during Snowflake Lane and Santa’s Arrival are toy drummers, merry snow characters, snowfall and much much more! For the first time ever, there will be a spectacular tree lighting with Santa at Bellevue Place.

Snowflake Lane happens nightly but it is only one night that Santa takes part in the jollification! If you miss Santa’s Arrival, that’s ok! He will be here at Bellevue Square from November 28th – December 24th. You can get a photo with Santa provided by Arthur & Associates inside Bellevue Square.

Enjoy the Christmas blast from the past, photos with Santa, and holiday carolers! Be sure to indulge and enjoy the original Frango chocolates to0 – Santa’s favorite.

Kiddos, if you don’t know who and what Fredrick and Nelson is, be sure to ask your grandparents, they’ll have many fond memories of downtown shopping trips through the high-class departments!

Santa at Pacific Place

Every night Pacific Place puts Seattleites and Northwest shoppers into the holiday spirit! With opportunities to see Santa, weekend musical performances, a nightly snowfall, and opportunities to give back to the community. The holiday festivities will last all through New Years Day! With a nightly snowfall at 6 PM and Santa’s Wonderland, visit here for hours and information. There are a variety of genres in the line-up for the weekend holiday performances, from Caribbean Christmas tunes, to Gospel Choirs, to Jazz Trios!

Pacific Place would not be complete without ways to give back! Pacific Place will give you a sparkling snow wand for a suggested $2 donation; all proceeds benefiting Seattle Children’s Hospital. A Very Merry Cranberry Brie Appetizer

This extra special, melty goodness will wow any guests at your next holiday party! With its gorgeous braid of puff pastry and topped with a luscious deep red cranberry sauce, this hors d’oeuvre has all the elements – Elegant, tasty, and filling! This creation really isn’t too hard to make, the only “making” you’re doing is the cooking of the cranberry sauce. From there it’s just all assembling.

Cranberry-Rosemary Baked Brie

 Northwest Holiday Appetizer

Ingredients:

1 cup fresh or frozen cranberries (if frozen be sure to completely thaw)

1 Tbsp finely chopped fresh rosemary

1/4 cup sugar

2 Tbsp balsamic vinegar

1 Tbsp water

Pinch of salt

8 oz. wheel of Brie

8 oz. of puff pastry

1 Tbsp melted butter

 

Directions:

Preheat oven to 375 degrees.

Put cranberries, rosemary, sugar, water, vinegar, and salt in a small saucepan.

Bring to a simmer, do not boil. Simmer for 10 minutes until the sauce has cooked down and thickened.

Place the brie in the center of your rolled out puff pastry.

Gently bring the sides up and fold over one another creating a braided look. Leave room in the center for the cranberry sauce.

Place the pastry covered wheel on a greased baking sheet. Pour the sauce in the middle and spread to cover the whole center.

Brush the puff pastry with melted butter (or for a lighter flakier crust, brush with egg whites).

Bake 10-15 minutes, until puff pastry is turning golden.

Place on a decorative plate, surrounded by crackers, and enjoy!
